Chocolate Coconut (flour) Mug Cake - Single Serve

Hellooooooooooooooooooo Nurse!  I just took my recipe for Vanilla Coconut (flour) Mug Cake - Single Serve and turned into a chocolate one.  Truth be told, I may never go back to vanilla!  


Chocolate Coconut (flour) Mug Cake - Single Serve

Ingredients:
1 Tablespoon Coconut Flour
1 Tablespoon Cocoa Powder
1 and 1/2 Tablespoons Milk
1 and 1/2 Tablespoons Butter
1 Egg
1 Teaspoon Stevia (or any alternative sweetener of choice)
1/8 Teaspoon Baking Powder
1/8 Teaspoon Salt
Splash of Vanilla extract
1 Oz Chocolate Chips 

Step 1:  In a large coffee mug, melt the butter in the microwave.  
Step 2:  Once melted, add the milk and vanilla and stir with a fork until well combined.
Step 3:  Add the egg into the mug and stir until well combined.
Step 4:  Add the remaining ingredients (Stevia, coconut flour, cocoa powder, baking powder and salt) - mix until well combined.  Add in the chocolate chips and give a good stir.
Step 5:  Microwave for roughly 2 minutes.  If you pull it out and it's under-cooked in the center, cook for 30 more seconds.

Let cool a bit before eating.  This gives a good dark flavor - depending on your tastes, you might want to up the sweetener if you prefer a sweeter chocolate flavor.

Blueberry Cheesecake Single Serve - Low Carb!

We've been a bit of a healthy train at our house and trying to eat a bit more low-carb.  This recipe has been my go-to for when I want something a little sweet.  And did I mention you can make it in the microwave? You can omit the coconut flour if you want - but I like the body it gives the cheesecake.  If you choose to omit it, the cheesecake will be a little bit more soft.


Blueberry Cheesecake
Serves 1 (or 2 if you want to share . . .just sayin')

Ingredients:
2 Ounces Cream Cheese
1/3 Cup Fresh Blueberries
1-2 Packettes of Stevia (depending on your pallet)
1/2 Teaspoon Vanilla Extract
1 Tablespoon Butter
1 Tablespoon 1/2 and 1/2 or Milk
1 Tablespoon Coconut Flour

Step 1:  In a large coffee mug, add blueberries and slightly mash with a fork.  Add the cream cheese, stevia, vanilla, butter and milk.  

Step 2:  Microwave for 1 minute.  Stir until well combined.  Add in the coconut flour and stir well.  Microwave another 30 seconds.  

Step 3:  Place in fridge to cool for about 1/2 hour.  Serve cold.

Rhubarb Sauce - Single Serve

Rhubarb . .. love it or hate it?  Me, I love it!  But, I'm pretty sure I'm the only one in my house who does love it.  So, I whipped up a little single-serve rhubarb sauce.  Enjoy!


Rhubarb Sauce - Single Serve

Ingredients:

1/2 Cup - 3/4 Cup Rhubarb, Diced (about 1-2 stalks, depending on size/thickness
Equal part water (1/2 Cup - 3/4 Cup)
1- 2 Tablespoons Honey

Place the clean and diced rhubarb into a sauce pan along with the water.  Cook on medium until it boils.  Reduce heat to a simmer.  Add in honey. Stir occasionally to break down the rhubarb.  Let cook until thickened (about 20 minutes total). 

Serve warm.  Or, try it with a scoop of ice cream.  Or, pour the sauce over a slice of cake.  Enjoy!

Vanilla Coconut (flour) Mug Cake - Single Serve

Sometimes, you just need a little sumthin' sumthin' . . .you know what I mean?  And by sumthin' sumthin' . . .I mean something sweet.  Nothing too complicated, nothing too horrible for you . .but something cakey.  Like this single serve vanilla mug cake made with coconut flour.  


Vanilla Coconut (flour) Mug Cake - Single Serve

Ingredients:
1 Tablespoon Coconut Flour
1 Tablespoon Milk
1 Tablespoon Butter
1 Egg
1 Teaspoon Stevia (or any alternative sweetener of choice)
1/8 Teaspoon Baking Powder

Baked Potato Salad

Here is a quick and easy side dish or small meal.  All the wonderful flavors of a yummy loaded baked potato, except in salad form and served cold!  Sour cream, chives, garlic, onion, bacon . . .oh my!  I'm filing it under single-serve, but it could be two servings  . . .if you were the sharing type of person! 


Baked Potato Salad
Serves 1-2

Ingredients:
1 Large Potato, Baked and Cooled
1/2 Small Onion, Diced Fine
1 Teaspoon Chives
1/4 Cup Sour Cream
2 Tablespoons Milk
1/4 Teaspoon Garlic Powder
1/4 Teaspoon Nature's Seasoning
1 Tablespoon Bacon Bits
1 Tablespoon Cheddar Cheese

Step 1:  Cut the cooled, baked potato into bite-sized pieces.  Place in a medium sized bowl.

Step 2: Add the diced onion, chives, bacon bits and cheese to the bowl.  Set aside.

Step 3:  Time to make the dressing!  In a small bowl:  combine the sour cream milk, garlic powder, and Nature's Seasoning.  Stir well.

Step 4:  Pour the dressing over potatoes etc.  Gently stir to combine.  You can serve immediately - but if you let it chill for about a half hour, it tastes even better!

Banana Bread Chocolate Chip Mug Cake

Mmmmmmm....warm banana bread with chocolate chips.  Always a favorite.  But sometimes you just don't have an hour or two to commit to baking a full loaf of banana bread!  In this mug cake - you'll find all same flavors . . .just pared down to a few ingredients.  Look at that lovely color on mine!  That comes from a farm fresh egg :)  Regardless of if your eggs are store bought or from a local farmer . . .this mug cake will make your tummy smile and leave you feeling satisfied (without the hour long wait!).


Banana Bread Chocolate Chip Mug Cake
Serves 1 (Generously!!!)

Ingredients:
1 Medium Ripe Banana, Mashed
1 Tablespoon Applesauce
1 Egg
1 Tablespoon Honey
1 Tablespoon Milk
1/4 Teaspoon Baking Powder
3 Tablespoons Flour
1 Tablespoon Chocolate Chips

Step 1:  In a large mug, combine the mashed banana, applesauce, egg, milk and honey.  Stir well with a fork to combine.

Step 2:  To the mug, add the flour, baking powder and chocolate chips.  Stir with the fork until well combined.

Step 3:  Place in microwave and cook for 1 minute.  If the center is firm (not jiggly) - it is done.  If it still appears jiggly - cook another 30 seconds.  Repeat in 30 second intervals until the center is no longer jiggly.  Mine took 2 minutes.

Step 4:  Let cool for 5 minutes.  Enjoy!

Peanut Butter, Chocolate Chip Mug Cake

I have this new addiction.  Same old flavors . . .new creation:  Peanut Butter, Chocolate Chip Mug Cake.  Cooks in 1 minute via the microwave and is only 4 ingredients.  Yes, it's true.  1 minute, 4 ingredients.  You can thank me later.


Peanut Butter, Chocolate Chip Mug Cake
Serves 1

Ingredients:
1 Egg
1/2 Teaspoon Vanilla 
1/4 Cup Peanut Butter (or 4 Tablespoons)
1-2 Tablespoons of Semi Sweet Chocolate Chips

In a microwave safe mug, add the egg, vanilla and peanut butter.  Stir until well combined.  I use a fork, it tends to break up and mix the ingredients very well.  Once well combined, stir in the chocolate chips.  Microwave for 1 minute.  Cool a few minutes before eating - just so you don't burn your tongue.  Enjoy!

Please Note:  In the above photo, I used a very large, over-sized coffee mug.  If this were made in a regular-sized coffee mug, it would puff up while cooking up to the rim!

Italian Sausage with Pesto Toasts

My perfect, easy, quick and delicious dinner.  Yes.  I know.  It is hard to believe.  But it is soooooo goooooooooood.  And easy.  And quick.  Did I already mention how delicious it is?  Italian sausage, red sauce and pesto toasts.  The flavors all complement each other so well - the slight saltiness from the sausage and pesto, the natural sweetness from the sauce along with crusty bread.  It's enough to make me swoon with gastronomic excitement!  


Italian Sausage with Pesto Toasts
Serves 1

Ingredients:
1 Italian Sausage, cooked (I like to use hot or spicy)
3/4 Cup Red Pasta Sauce (spaghetti sauce from a jar works just fine - use your favorite!)
2 Pieces of Crusty Bread
2 Tablespoons Basil Pesto

Step 1:  Spread the pesto on top of the bread.  Place on baking sheet and put under the broiler.  Broil until toasty.  Set aside.

Step 2:  Meanwhile, slice your Italian sausage into small bite sized pieces.  I like to slice the sausage the long way first and then slice it into smaller bits from there.  Put the sausage into a small pan and head on medium high heat, just until it begins to sizzle.  We want to brown the sausage just a bit.  

Step 3:  Once the sausage starts to brown, add the pasta sauce.  Stir until combined and continue cooking until the sauce is heated through.

Step 4:  To serve, ladle the sauce/sausage into a shallow bowl and place the warm pesto toast on the side.  To consume, dip the toast into the sauce.  Or, place the sauce on top of the toast with a piece of sausage . . ..heaven!

Chicken, Black Bean and Avocado Burrito

Sometimes, a girl just needs to eat her avocado . . .and this is a great way to do so.  Every now and then, I just crave them.  Oh so creamy and delicious . . . very underrated fruit!  Here is a quick burrito that comes together easily.  The flavors melt together and is just divine.  


Chicken, Black Bean and Avocado Burrito
Serves 2

Ingredients:
1/2 Cup Shredded Chicken
1/2 Cup Black Beans, rinsed
1 Avocado - Diced
3 TB Salsa
1 TB Ranch Dressing
2-3 TB of Red Onion, diced
2 Large Tortillas (8-10 inch size)

In a large, microwave safe bowl, combine all ingredients except for the tortillas.  Gently stir to combine.  Microwave for 1-2 minutes on high, until thoroughly heated through.  Lay out your tortillas on plates.  Divide the mixture between the two tortillas.  Wrap each tortilla up and enjoy!

Optional:  Instead of enjoying right away, heat a skillet with a little non-stick spray in it.  Add the assembled burritos and cook over medium heat until browned on one side, then flip and brown on the second side.  YUMMO!!

Oatmeal Muffin for One (or Two)

I know, I know . .you are likely thinking "another oatmeal recipe?".  Well, what can I say . . . I (heart) oatmeal.  And this recipe is perfect for when you are craving a little something sweet.  You can add chocolate chips or raisins to it - even nuts would be yummy too.  It's really up to you!  It is best eaten right out of the microwave though . .. so give yourself a 5 minute break and make this yummy muffin  . ..you deserve it!  And it's oatmeal . . .so it's healthy, right?


Oatmeal Muffin for One (or Two)
Ingredients:

1/2 cup oats
1 Egg
1 Tablespoon Brown Sugar
1 Tablespoon Flour
1/4 Teaspoon Vanilla Extract
1/3 Teaspoon Baking Powder
2 Tablespoons Chocolate Chips or Raisins
1/4 Teaspoon Cinnamon

Step 1:  Lightly spray an over-sized coffee mug or a cereal bowl with pan spray.  Please be sure that it is microwave safe ;)

Step 2:  Add all ingredients to the mug or bowl and stir to combine.

Step 3:  Microwave for approximately 1 minute - 1 minute 30 seconds.  Check it at 1 minute, if it is firm, it is done.  If it still seems a little too soft, microwave a bit longer.

Step 4:  Let rest for a 1 minute before diving in!  Enjoy :)

Baked Oatmeal To Go

I have a love/hate relationship with oatmeal.  I love the flavor.  I hate the texture of it as a porridge or how it's traditionally prepared.  But I do love, love, love the flavor.  I love it in cake.  I love it in muffins.  I love it in crisps.  You get the picture :)  

And then I started seeing recipes for baked oatmeal . . .and it looked like muffins.  Hmmmm.  This peaked my interest.  I finally tried out a recipe and I LOVE THEM.  The texture is like a spongy muffin - and I'm good with that.   Super yummy, super moist, super delicious.


Baked Oatmeal To Go (Single Servings)
Yield:  12
Ingredients

2 Cups Oatmeal (Quick-Cook or Old Fashioned Oats)
1/2 Cup Brown Sugar
1/2 Cup Chocolate Chips (or other "add-in" such as raisins, nuts etc . .whatever you like)
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
1 Egg
1 and 1/2 Cups Milk
1/2 Cup Applesauce
2 Tablespoons Butter or Margarine, Melted

Step 1:  Preheat oven to 375° Fahrenheit.  Prepare muffin tin with liners.

Step 2:  In a large bowl, beat the egg and then add in the milk, applesauce and melted butter.  Stir to combine.

Step 3:  In a separate bowl, combine the flour, salt and baking powder.  Stir to combine.

Step 4:  Add the dry ingredients to the wet ingredients and mix well.  The will be very wet!

Step 5:  Divide the mixture among the muffin tin liners.  An ice cream scoop works well for this.  Please note, each muffin liner will be nearly full to the top.

Step 6:  Bake for 25-30 minutes or until slightly beginning to brown around the edges. These will not puff-up like a muffin or cupcake.  

Let cool 10-15 minutes before eating.  To store, place in air-tight container and keep in fridge.
